Rice, egg and trout salad

It turns out that the best recipes can be created in a very spontaneous way.....no plan, just an immense urge to have something to eat. Anything! Glimpse in the fridge...disappointment,not much left except for the light!So you take out what you've got,mix it up, spice it up.Ta dah!

I did that the other week and it turned out that I made our fave dish! We have it at least twice a week now and just can't get enough. I hope you will enjoy it to. Let me know if you do!




RECIPE:

SERVES: 4

INGREDIENTS:

200g basmati rice
250g trout, cooked, poached or baked, cut into pieces
5 eggs, soft boiled, cut in halves or quarters
1 tsp turmeric
2 tbsp flat leaf parsley, roughly chopped
1/2 tsp sesame seeds
handful of cashew nuts
salt and pepper

METHOD:

Throw everything on the plate,season with salt and pepper and ENJOY :)


NOTES:

To soft boil eggs - place them in a boiling, salt water, using the spoon and simmer for 5 minutes.

QUAIL EGG SALAD




RECIPE:

INGREDIENTS:

quail eggs
rocket lettuce
spinach
watercress
red onion
avocado
pecan nuts
olive oil
freshly ground pepper

Mix how much of every ingredient you like ;)

PERFECT QUAIL EGGS:

TO SOFT BOIL IT: place in gently boiling water for 1 minute, leave eggs in the water for a further 30 seconds, remove and peel the shells then serve.

TO HARD BOIL: place in gently boiling water for 2 1/2 minutes, remove, remove,run under cold water and then peel the shells and serve.

Sunny Salad

HAPPY NEW YEAR everyone! ;) I'm glad 2013 is over....finally...It was a taught year and I hope 2014 will be a better one.I have a feeling it will ;)

In this New Year I would like to wish you all GOOD HEALTH.....because there is nothing more important...

I'm a believer that food is our medicine and by nurturing our body we feel better, look better and stay healthy.And at the end of the day our body is the most valuable treasure we have got.Why do we often forget to look after it?


WE are WHAT WE EAT.
So don't be
FAST,CHEAP,EASY or FAKE.







Recipe:

INGREDIENTS:

Wild salmon
Rocket salad
Tangerines or mandarins (or any other citrus you like)
Pomegranate
Almond flakes

Quantities:  your choice, mix how much you like and enjoy!

BROCCOLI SALAD

As everyone has probably noticed - I'M ADDICTED TO GARLIC!And I'm not ashamed of that fact ;) I love it!!But I promise I will post recipes without garlic too.I will try my hardest anyway...... ;) But before I do you must try this one!It's delicious!But I do have other addictions too - like DILL!And this is my perfect combination that you can taste in this salad!




RECIPE:

SERVES: 4

INGREDIENTS:

300g broccoli,cut and steamed
5 free range eggs,boiled and cut
140 g sweetcorn (tinned)
fresh dill,chopped
pepper,freshly grounded
sea salt,freshly grounded

Sauce:
2-3 garlic cloves,crushed
40 ml double cream
2 tbsp mayo

1.Just mix all the ingredients in the bowl and season with salt and pepper.


2.For the sauce exactly the same:just mix together.You can mix the sauce with the salad or just sprinkle on the top.
