ICED COFFEE



I must be barmy to serve you an iced coffee on a freezing cold Friday evening. It's 13C here and I'm snuggled under my quilt while writing this post(brrrrr).Why haven't I made something warming,you probably think?
Before I entered the bloging world, I mainly derived my cooking inspiration from the cookbooks I own, magazines, family and friends. It was enough and there have always been something new to try.
These days, I travel a lot on daily basisc, I eat breakfast with Marta from What Should I Eat For Breakfast Today in Berlin, before the midday I pop in to see Molly form My name is yeh in North Dakota, scoff lunch with Sarah from New Roots in Copenhagen, drink afternoon tea with  David and Louise from Green Kitchen Stories in Stockholm, and fly to San Francisco in the evening to meet up with Heidi from 101 Cookbooks. Yes, I'm very busy lady :) Everyday is a different story, everyday there is lots of new inspirations. My notebook is bursting at the seams with the new recipes I want to try and the list is getting longer and longer.....unfortunately my day isn't :)

I spotted this recipe for an iced coffee at Marta's blog - What Should I eat for Breakfast Today and I've been craving it ever since.I couldn't wait till next year to try it even if it meant teeth chattering!Just added some cinnamon... And you know what?I loved it!!!


RECIPE:

INGREDIENTS:

coffee (freshy ground)
milk(of your choice)
pinch or two of cinnamon
honey or brown sugar(optional)

METHOD:

Brew your coffee, as you like it, add cinnamon, sweeten it with some honey or brown sugar if you like. Put it on the side and let it cool down. Pour it in an ice form and freeze. Place coffee cubes in a cup and pour cold milk over it.

Blueberry, lemon and coconut MILKSHAKE

Have you got a favourite flavour mix?A combination of ingredients you just can't resist?When I asked Darek about his, I already had his answer in my head - he just loves strawberry and white chocolate combination.It can be anything - Eaton Mess with lots of strawberries, white chocolate bits and meringue on the top of it. His eyes always widen when he sees strawberry and  white chocolate muffins and he could dunk(and eat) strawberries in a white chocolate sauce all day long.I know him well.We'd been together 10 years, married for 4... Who would know him better?Although the answer was obvious I still decided to throw the question......he was thinking for a bit and totally certain he says ''It's steak and black pepper''. STEAK AND BLACK PEPPER!!!!!!????I obviously didn't expect that coming.... :O

I would love to get to know your ''crazy'' flavour combinations :) I definitely don't share my husband's excitement about steak and black pepper ''flavours''.Lately I've been in love with  blueberries, lemon and coconut.And everything made from these ingredients.







RECIPE FOR A (another) MILKSHAKE with blueberries,coconut and lemon :

serves:4

INGREDIENTS:

1 tin coconut milk(400g) - I love organic KINGFISHER
350g blueberries
fresh juice squeezed from half of lemon
1tbsp (or more) honey

METHOD:

Blend coconut milk with 200g blueberries, lemon juice and honey until smooth. Remove from the blender and blend 150g blueberries with the remaining smoothie.Pour the blueberry mousse into the glasses first and top it up with a smoothie.

NOTES:
If your blender(like mine grrrrrr ;/) is not very powerful if might be worth squashing blueberries for a mousse with the fork. It will be much easier to blend them.

Strawberry(layered) MILKSHAKE with coconut milk

Oh dear strawberries I'm going to miss you! Can't wait to see you next year! I wish some of the months were a little bit(ok, a lot!) longer, I love July, but as it's gone and forgotten, my favourite fruit is also on the verge of extinction.*sad face*
As a smoothie queen I do experiment with my blender quite a lot :) To celebrate my last, beloved strawberries I thought it will be nice to try something different. A milkshake!!!A COCONUT MILKSHAKE with a strawberry mousse.You obviously make it as any other smoothie :) but it is extremely creamy.




RECIPE:

serves:4

INGREDIENTS:

1 tin coconut milk(400g) - I love organic KINGFISHER
450g strawberries
1tbsp (or more) honey

METHOD:

Blend coconut milk with 300g strawberries until smooth. Remove from the blender and blend 150g strawberries with the remaining smoothie.Pour the mousse into glasses first and top it up with a smoothie.Mniam,mnam,mniam :)

NOTES:
If your blender(like mine) is not very powerful if might be worth squashing strawberries for the mousse with the fork. It will be much easier to blend them.

Drinking Baileys Colada to celebrate 1st year of blogging :D :D :D

It's already been a year since I started this blog. I remember I was full of concerns whether it was good idea, weather I would have time for it all and weather anyone will even want to read it....
I've got no regrets for sure - it's been a great time!I finally have my own little place where I can unleash my creativity, I have been learning something new every single day, I've met some lovely people and the most importantly creating this blog has given  me so much happiness :D

And so I'm here today reflecting back the passed year and celebrating in style with a drink in my hand.Cheers to you all xxx Big hugs xxx








RECIPE:

FOR 3 JARS

INGREDIENTS:

100ml Irish cream f.e. Baileys
100ml Caribbean rum f.e. Malibu
100ml fresh pineapple juice
100ml coconut milk
ice

Method:

1.Place all the ingredients in a blender(without ice) and blend for 1 minute. Serve with ice and piece of pineapple.

LEMONADE


After a long and exhausting Winter I'm happy and excited to say HELLO to Spring :) Days are becoming longer and the sun is more eager to peek through the clouds. The nature is waking up and leaf and flower buds are about to flourish. 
Finally we can all feel that SPRING IS IN THE AIR. 

The recipe I want to share with you today is for the best lemonade I've ever tried. And I know I will never buy lemonade again, nothing will beat a home-made one :)





RECIPE:

Serves: 6

INGREDIENTS:

1.6 litre water

6 lemons (unwaxed)
5 TBSP honey
handful of fresh mint
ice cubes

METHOD:

1. Heat 200ml water with honey in a small saucepan until the honey is dissolved completely.

2.In the meantime extract lemon juice from 4 lemons.

3. Add the juice and the honey water to a pitcher. Add the rest of cold water, fresh mint and 2 chopped lemons.Mix. Refrigerate 30 to 40 minutes.Serve with ice.

SUNNY COCKTAIL

Does everyone else also suffer from chronic lack of time?HELP!I haven't got time for anything....I either got myself involve into too many things or my day is just shorter than everyone else's. HOW TO STOP THIS CLOCK?What is wrong with today's world?It looks like everybody is rushing everywhere like a whirlwind and we  live in such convenient times. We don't spend days hunting our food - it takes minutes, hour the most to buy everything we need in the supermarket. We don't walk anywhere - we drive. We go to a restaurant or buy something on the go, so we don't have to cook, dishwasher washes up our dishes, washing machines wash our clothes.With one click of the button we connect with friends without going out....We've got everything we need to save time but we still haven't got it....Where is the time?

For those who think the time is priceless I suggest buy a blender and conjure some sunshine in a bottle during a rainy day within minutes :)

RECIPE:

Serves: 4

INGREDIENTS:



1 big mango, chopped
1 banana,chopped
2 pears, chopped
500 ml apple juice
fresh juice from half a lime

METHOD:

1.Place all the ingredients in the blender.

2. Switch  the blender on ;)

3.Blend until smooth.

4. Switch the blender off :)

MANGO AND BANANA SMOOTHIE

I want to pay a tribute here to the most amazing device in my house - my HERO - my BLENDER.Thank you, thank you, thank you!And also to the person who invented it. YOU HAVE MADE MY LIFE SO MUCH EASIER!

Yes!I'm standing in the kitchen, looking at it while it blends my favourite foods into a velvety and creamy smoothie and I'm thinking ''GOSH YOU ARE AMAZING''. 10 min longer in bed(and everyone knows what 10 min longer in bed feels like), scrumptious breakfast(or lunch, or snack)within 2 minutes and this taste......hmmmmm :) it will spoil your taste buds....






RECIPE:
 For 3 big glasses

INGREDIENTS:

2 small bananas
1 small mango
500 ml organic soya milk
1 BIG spoonful of milled flaxseeds

METHOD:

B L E N D :)

MULLED WINE











 RECIPE:

INGREDIENTS:

750 ml red wine
2 cinnamon sticks
4 star anise
6 - 8 cloves
50g brown sugar
fresh orange juice from 1 orange
2 – 3  oranges,peeled, cut into wedges
50g fresh cranberries, slightly pressed

METHOD:

1.Put all ingredients into a medium pot, simmer for around 6-8 minutes,don't boil!

2.Serve with orange wedges ;)

The best enjoyed with company ;)

RECIPE:

INGREDIENTS:

for 1 glass

1 pear,peeled, cored and chopped
2 plums, stoned,chopped
180 ml orange juice
pinch of cinnamon
1-2 tbsp oats
1 tbsp flaxseeds

Method:

1.Place the ingredients in a blender and mix on high speed until smooth ;) So simple, so delicious ;)

Forest Fruit SMOOTHIE






RECIPE:

for 4 glasses

INGREDIENTS:

300ml/1/2 pint milk
150ml/5fl oz natural yoghurt
150g/5oz bluberries
100g/3 1/2 oz blackberries
150g/5oz wild strawberries
50g/2oz oats
1- 2 tbsp honey

METHOD:

1.Mix all the ingredients in a blender for few minutes.

Easy peasy ;)
